Ingredients
For the Salad
- 3 medium beetroot (beets), approximately 450–500 g
- 1½ cups cooked chickpeas, drained and rinsed

Lemon-Garlic Vinaigrette
- ¼ cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1–2 garlic cloves, finely minced or grated
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup, optional
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Instructions
1. Cook the beetroot.
If using raw beetroot, wash it thoroughly but don’t peel it.
Wrap each beetroot loosely in foil and place on a baking tray.
Roast at 400°F (200°C) for approximately 35–50 minutes, depending on their size.
They’re ready when a knife slides easily into the centre.
Allow them to cool until comfortable to handle.

2. Prepare the chickpeas.
