Mediterranean Greek Salad

Ingredients
* 2 cucumbers, sliced
* 2 cups cherry tomatoes, halved
* 200 g (7 oz) feta cheese, cubed
* ½ small red onion, thinly sliced
* ½ cup Kalamata olives
* 2 tbsp chopped fresh parsley
Dressing
* 3 tbsp extra virgin olive oil
* 1 tbsp lemon juice
* 1 tsp dried oregano
* ½ tsp black pepper
* Pinch of salt (optional, as feta and olives are salty)
Instructions
1. In a large bowl, combine the cucumbers, cherry tomatoes, red onion, olives, and parsley.
2. Add the cubed feta cheese.
3. In a small bowl, whisk together the olive oil, lemon juice, oregano, black pepper, and a pinch of salt.
4. Pour the dressing over the salad and gently toss until everything is evenly coated.
5. Let the salad sit for 5–10 minutes before serving to allow the flavors to blend.
