Ingredients
The Base:

1 kg (approx. 2.2 lbs) Fresh Pumpkin: Peeled, seeded, and cut into 1.5-inch cubes

Instructions
1. Prep the Pumpkin Place the cubed pumpkin into a large, heavy-bottomed pot. Sprinkle the sugar evenly over the top of the pumpkin cubes. If you have the time, let this sit for 30–60 minutes so the pumpkin naturally releases its juices, though you can skip this step if you are in a hurry.
2. Start the Simmer Pour the water into the pot and add the cinnamon stick, cloves, and salt. Place the pot on the stove over medium-high heat until the liquid begins to gently boil.
3. Cook the Pumpkin Once boiling, reduce the heat to low. Cover the pot with a lid and let it simmer for about 25–30 minutes, or until the pumpkin is tender but still holding its shape. Gently stir occasionally to ensure nothing sticks to the bottom.
4. Add the Nuts and Fruit Remove the lid. The liquid should be slightly reduced and syrupy. Gently fold in the walnuts and dark raisins.
5. Final Reduction Leave the lid off and let the mixture simmer on low for another 10–15 minutes. This allows the walnuts to soften slightly, the raisins to plump up, and the syrup to thicken and glaze the ingredients perfectly.
6. Cool and Serve Remove the pot from the heat and let it cool slightly. Discard the cinnamon stick and cloves before serving. This dish is delicious served warm on its own, or cooled and topped with a dollop of thick cream, cottage cheese, or Greek yogurt!
