Creamy Cucumber Dill Salad
Ingredients
* 2 medium cucumbers, thinly sliced
* ¼ small red onion, thinly sliced
* ¼ cup shredded cheddar cheese
* 2–3 tbsp fresh dill, chopped (plus a small sprig for garnish)
* ½ cup mayonnaise
* ¼ cup sour cream
* 1 tbsp lemon juice
* 1 tsp Dijon mustard
* ½ tsp garlic powder
* Salt, to taste
* Freshly ground black pepper
* Everything bagel seasoning (for garnish, optional)
Instructions
1. Wash the cucumbers and slice them into thin rounds. Thinly slice the red onion and chop the fresh dill.
2. In a large bowl, whisk together the mayonnaise, sour cream, lemon juice, Dijon mustard, garlic powder, chopped dill, salt, and black pepper until smooth and creamy.
3. Add the sliced cucumbers, red onion, and shredded cheddar cheese to the bowl.
4. Gently toss everything until the vegetables are evenly coated with the creamy dressing.
5. Refrigerate for 15–20 minutes to allow the flavors to blend and the salad to chill.
6. Transfer to a serving bowl and garnish with a sprig of fresh dill, a few grinds of black pepper, and a sprinkle of everything bagel seasoning if desired.
7. Serve cold as a refreshing side dish with grilled chicken, fish, burgers, or sandwiches.
