Creamy Garlic Mushroom Spinach Salmon
Ingredients
* 4 salmon fillets
* 2 tbsp olive oil
* 2 tbsp butter
* 3 garlic cloves, minced
* 200 g mushrooms, sliced
* 2 cups fresh spinach
* 1 cup heavy cream
* ½ cup grated Parmesan cheese
* 1 tsp Dijon mustard (optional)
* ½ tsp dried dill or Italian seasoning
* Salt and black pepper, to taste
* Fresh parsley or dill, chopped (for garnish)
* Red pepper flakes (optional)
Instructions
1. Season the salmon with salt, pepper, and a pinch of dried dill.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes per side until golden. Remove from the skillet and set aside.
3. In the same skillet, melt the butter. Add the mushrooms and cook for 5–6 minutes until browned.
4. Stir in the garlic and cook for 30 seconds until fragrant.
5. Add the spinach and cook until just wilted.
6. Pour in the heavy cream, then stir in the Parmesan cheese and Dijon mustard (if using). Simmer for 3–4 minutes until the sauce thickens slightly.
7. Return the salmon to the skillet. Spoon the creamy mushroom sauce over the fillets and simmer for 2–3 minutes until the salmon is fully cooked.
8. Garnish with chopped parsley or fresh dill and a sprinkle of red pepper flakes, if desired. Serve hot with mashed potatoes, rice, pasta, or crusty bread.
