Ingredients
For the Blueberry Compote
- 1 cup fresh or frozen blueberries
- 1 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1 tsp cornstarch (optional, for a thicker compote)
- 1 tbsp water
For the Parfait
- 2 cups plain or vanilla Greek yogurt
- 1 cup granola
- ½ cup fresh blueberries
- 1 tbsp honey (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a small saucepan, combine the blueberries, honey, lemon juice, and water.
- Cook over medium heat for 5–7 minutes until the blueberries burst and become syrupy.
- If you’d like a thicker compote, stir the cornstarch into a teaspoon of water and mix it into the berries. Cook for another minute, then remove from heat and let cool.
- Spoon a layer of granola into the bottom of a serving glass or jar.
- Add a generous layer of Greek yogurt.
- Spoon some blueberry compote over the yogurt.
- Repeat the layers with more granola, yogurt, and blueberry compote.
- Top with fresh blueberries and drizzle with honey if desired.
- Garnish with mint leaves and serve immediately, or refrigerate until ready to enjoy.
