Ingredients

For the Cauliflower Fritters

  • 1 medium head cauliflower, cut into florets
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 large eggs
  • ⅓ cup all-purpose flour or almond flour
  • 2 tablespoons finely chopped green onions
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried Italian seasoning
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon ground black pepper
  • 3–4 tablespoons olive oil or avocado oil, for frying

For the Garlic Herb Dip

  • ¾ cup plain Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 small garlic clove, finely grated
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped parsley
  • 1 teaspoon chopped fresh dill or ½ teaspoon dried dill
  • ¼ teaspoon salt
  • Pinch of black pepper
  • Smoked paprika and dried herbs, for garnish

Instructions

Prepare the Dip

In a small bowl, combine the Greek yogurt, mayonnaise, grated garlic, lemon juice, parsley, dill, salt, and black pepper. Mix until smooth and creamy. Taste and adjust the seasoning as needed. Cover the bowl and refrigerate while preparing the fritters. Chilling allows the garlic and herbs to blend into the dip.

Cook the Cauliflower

Bring a large pot of lightly salted water to a boil. Add the cauliflower florets and cook for 5–6 minutes, until tender but not mushy. Drain thoroughly and allow the cauliflower to cool for several minutes.
Transfer the cauliflower to a clean kitchen towel or several layers of paper towels. Press firmly to remove as much moisture as possible. This step is important because excess water can make the fritters soft and difficult to shape.

Make the Fritter Mixture

Finely chop or lightly mash the drained cauliflower. It should resemble coarse crumbs rather than a smooth purée. Place it in a large mixing bowl.
Add the mozzarella, Parmesan, eggs, flour, green onions, garlic, onion powder, smoked paprika, Italian seasoning, salt, and black pepper. Stir until everything is evenly combined. Let the mixture rest for 5 minutes so the flour can absorb some of the moisture.
If the mixture feels too wet to shape, add another tablespoon of flour. If it seems too dry, mix in one tablespoon of beaten egg or Greek yogurt.

Shape and Cook

Scoop about two tablespoons of the mixture into your hands and gently press it into a small patty. Repeat with the remaining mixture.
Heat two tablespoons of oil in a large nonstick skillet over medium heat. Arrange the fritters in a single layer without overcrowding the pan. Cook for 3–4 minutes on the first side, until deeply golden and crisp. Carefully flip and cook for another 3 minutes.
Transfer the cooked fritters to a paper towel-lined plate or wire rack. Add more oil to the skillet as needed and continue cooking the remaining batches.
Serve the cauliflower fritters warm with the chilled garlic herb dip. Garnish the dip with smoked paprika, parsley, or dill.

Tips and Notes

Make sure the cauliflower is well drained because moisture is the main reason vegetable fritters fall apart. Keep the patties fairly small so they are easier to flip. Allow the first side to become fully golden before turning them. For extra crunch, add two tablespoons of panko breadcrumbs to the mixture.
To bake them, arrange the fritters on a parchment-lined baking sheet, spray lightly with oil, and bake at 425°F or 220°C for 20–25 minutes, flipping halfway through. They may also be cooked in an air fryer at 390°F or 200°C for approximately 12–15 minutes.

Storage and Reheating

Store leftover fritters in an airtight container in the refrigerator for up to four days. Reheat them in an air fryer, oven, or dry skillet until hot and crispy. Avoid microwaving when possible because it can soften the exterior.
