Description

These Cheesy Chicken Potato Rolls are the ultimate comfort food—crispy on the outside, creamy and cheesy on the inside, and packed with flavorful seasoned chicken. Made with soft mashed potatoes wrapped around a savory chicken filling and baked until golden, these rolls are perfect as an appetizer, snack, lunch, or light dinner. The melted cheese creates an irresistible golden crust while the potato layer stays soft and fluffy, making every bite rich, satisfying, and delicious.

They’re great for meal prep, freezer-friendly, and can easily be customized with your favorite vegetables, herbs, or spices. Serve them with garlic mayo, ketchup, spicy ranch, or your favorite dipping sauce for a crowd-pleasing dish everyone will love.

Ingredients

For the Potato Dough

  • 4 medium potatoes, peeled and cubed
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons cornstarch
  • ¼ cup grated Parmesan cheese

For the Chicken Filling

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup grated carrot
  • ½ cup finely chopped bell pepper
  • 1 teaspoon paprika
  • ½ teaspoon chili flakes (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley

For Assembly

  • 1½ cups shredded mozzarella cheese
  • ½ cup cheddar cheese
  • 1 egg, beaten (for brushing)
  • 2 tablespoons chopped parsley

Instructions

Step 1: Cook the Potatoes

Boil the potatoes in salted water for 15–18 minutes until fork tender. Drain well and let them sit for 5 minutes to remove excess moisture. Mash until completely smooth.

Mix in the butter, salt, pepper, garlic powder, Parmesan cheese, and cornstarch. Stir until a soft dough forms. Allow it to cool.

Step 2: Prepare the Filling

Heat olive oil in a skillet over medium heat.

Cook the onion for 3–4 minutes until soft. Add the garlic and cook for another minute.

Add the carrot and bell pepper, cooking for 3 minutes.

Stir in the shredded chicken, paprika, Italian seasoning, chili flakes, salt, and pepper. Cook for another 3–4 minutes until everything is well combined.

Remove from the heat and mix in the chopped parsley.

Step 3: Shape the Rolls

Preheat the oven to 375°F (190°C).

Line a baking tray with parchment paper.

Divide the potato dough into equal portions.

Flatten one portion into a rectangle using lightly oiled hands.

Place 2–3 tablespoons of the chicken filling in the center.

Add a generous sprinkle of mozzarella and cheddar cheese.

Roll tightly and seal the edges completely.

Repeat with the remaining dough and filling.

Step 4: Bake

Arrange the rolls seam-side down on the prepared baking tray.

Brush each roll with beaten egg.

Sprinkle the remaining mozzarella and cheddar cheese generously over the top.

Bake for 25–30 minutes, or until the cheese is melted and golden brown.

For an extra crispy top, broil for 2–3 minutes at the end.

Step 5: Serve

Let the rolls cool for 5 minutes before serving.

Garnish with fresh parsley and enjoy hot with garlic aioli, ketchup, spicy mayo, ranch dressing, or your favorite dipping sauce.

Tips & Notes

  • Dry the potatoes well after boiling to prevent sticky dough.
  • Chill the potato dough for 20 minutes if it feels too soft.
  • Add chopped spinach, corn, mushrooms, or jalapeños to the filling for extra flavor.
  • Substitute turkey or beef for the chicken if preferred.
  • Freeze unbaked rolls for up to 2 months and bake directly from frozen, adding 8–10 minutes to the baking time.
  • Leftovers can be refrigerated for up to 4 days and reheated in the oven or air fryer for the best texture.
