Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder

- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
For the Filling
- 2 cups fresh spinach, chopped
- ½ cup crumbled feta cheese
- ⅓ cup chopped sun-dried tomatoes (drained if packed in oil)
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- ¼ tsp crushed red pepper flakes (optional)

Instructions
- Preheat your oven to 375°F (190°C).
- Carefully cut a deep pocket into the side of each chicken breast without slicing all the way through.
- Heat 1 tablespoon olive oil in a skillet over medium heat. Add the garlic and cook for about 30 seconds until fragrant.
- Stir in the chopped spinach and cook until just wilted, about 2–3 minutes.
- Remove the skillet from the heat and mix in the feta cheese, chopped sun-dried tomatoes, oregano, and red pepper flakes if using. Allow the mixture to cool slightly.
- Divide the filling evenly among the chicken breasts, stuffing each pocket generously. Secure the openings with toothpicks if necessary.
- In a small bowl, combine garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.
- Brush the chicken breasts with the remaining olive oil and season all sides evenly with the spice mixture.
- Heat an oven-safe skillet over medium-high heat. Sear the chicken for about 3–4 minutes per side until beautifully golden.
- Transfer the skillet to the oven and bake for 18–22 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
- Garnish with chopped parsley and serve with lemon wedges if desired.
