For the Lasagna

  • 3 medium zucchini
  • 1 lb (450g) lean ground turkey or lean ground chicken
  • 2 cups low-fat cottage cheese
  • 1 cup ricotta cheese
  • 2 cups shredded part-skim mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups low-sugar marinara sauce
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife.
  3. Sprinkle both sides with a little salt and let them rest for 20 minutes to remove excess moisture. Pat dry thoroughly with paper towels.
  4. Heat olive oil in a large skillet over medium heat. Add onion and cook for 3–4 minutes until softened.
  5. Add garlic and cook for another 30 seconds.
  6. Stir in the ground turkey or chicken and cook until browned, breaking it apart with a spoon.
  7. Season with Italian seasoning, oregano, paprika, salt, and pepper.
  8. Add the marinara sauce and simmer for 5 minutes.
  9. In a bowl, combine cottage cheese, ricotta, egg, half of the Parmesan cheese, and mix until smooth.
  10. Spread a thin layer of meat sauce on the bottom of the baking dish.
  11. Arrange a layer of zucchini slices over the sauce.
  12. Spread one-third of the cheese mixture over the zucchini.
  13. Add another layer of meat sauce.
  14. Sprinkle with mozzarella cheese.
  15. Repeat the layers until all ingredients are used, finishing with meat sauce, mozzarella, and the remaining Parmesan cheese on top.
  16. Cover loosely with foil and bake for 35 minutes.
  17. Remove the foil and bake an additional 20–25 minutes until the cheese is bubbly and beautifully golden.
  18. Let the lasagna rest for 10–15 minutes before slicing to help it hold together.
  19. Garnish with fresh basil or parsley before serving.
