Frozen Purslane Flavor & Nutrition Boosters
Think of these frozen green cubes as instant nutrient-and-flavor bombs! They keep in the freezer for months and instantly elevate everything from morning eggs to evening soups.

Ingredients

4 cups fresh purslane (leaves and tender stems)

1 cup fresh parsley or cilantro

3 garlic cloves

½ cup olive oil

2 tbsp fresh lemon juice

1 tsp sea salt

½ tsp black pepper
Optional Add-ins:

1 green chili (for heat)

¼ cup spinach (for extra mild greens)

Instructions

Clean & Prep: Wash the purslane thoroughly under cold water to remove any dirt or grit. Trim and discard any thick, woody stems.

Blanch: Bring a pot of water to a boil. Drop the purslane in and blanch for just 30 seconds.

Ice Bath: Transfer the purslane immediately into a bowl of ice water. This stops the cooking process and locks in that bright green color.

Drain Well: Drain the purslane thoroughly, squeezing out any excess water.

Blend: Add the purslane, parsley/cilantro, garlic, lemon juice, salt, pepper, olive oil, and optional add-ins into a blender. Blend on high until smooth and vibrant.

Freeze: Pour the mixture evenly into ice cube trays or small silicone molds. Place in the freezer until completely solid.

Store: Pop the frozen cubes out of the tray and transfer them to an airtight freezer bag labeled with the date.
