Cheesy Garlic Stuffed Zucchini Boats

Ingredients
* 3 medium zucchini
* 1 tbsp olive oil
* 2 cloves garlic, minced
* 4 oz (115 g) cream cheese, softened
* ½ cup shredded mozzarella cheese
* ¼ cup grated Parmesan cheese
* ½ tsp Italian seasoning
* ¼ tsp black pepper
* ½ tsp salt
* ½ cup shredded cheddar or extra mozzarella (for topping)
* 2 tbsp chopped fresh parsley
Instructions
1. Preheat the oven to 400°F (200°C).
2. Slice the zucchini in half lengthwise and scoop out the centers, leaving about ¼ inch around the edges to form boats.
3. Brush the zucchini with olive oil and season lightly with salt and pepper.
4. In a bowl, mix the cream cheese, garlic, mozzarella, Parmesan, Italian seasoning, salt, and pepper until smooth.
5. Fill each zucchini boat with the cheese mixture.
6. Sprinkle the cheddar or extra mozzarella evenly over the tops.
7. Bake for 20–25 minutes, until the zucchini is tender and the cheese is golden and bubbly.
8. Garnish with fresh chopped parsley and serve hot.
