Georgia Tomato Egg Cracker Salad

Creamy, crunchy, fresh, and packed with flavour! This Georgia tomato and egg cracker salad combines tender hard-boiled eggs, juicy tomatoes, crisp red onion, fresh dill, and a creamy dressing. Serve it with crackers for an easy lunch, snack, or light dinner.

 Ingredients

For the Salad

  • 6 large eggs
  • 2 cups cherry tomatoes, halved
  • ¼ small red onion, finely diced
  • 2 tbsp fresh dill, chopped
  • ¼ cup chopped celery, optional
  • ¼ cup chopped pickles, optional
  • Salt, to taste
  • ½ tsp freshly ground black pepper

For the Creamy Dressing

  • ½ cup mayonnaise
  • ¼ cup sour cream or plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • ½ tsp garlic powder
  • ½ tsp dried dill
  • ¼ tsp paprika
  • Salt and black pepper, to taste

For Serving

  • Saltine or buttery crackers
  • Extra fresh dill for garnish
  • Freshly cracked black pepper

 Instructions

1. Boil the eggs

Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and gently boil for about 10–11 minutes.

Transfer the eggs immediately to a bowl of ice water and let them cool completely.

2. Prepare the eggs

Peel the cooled eggs and roughly chop them. For the best texture, don’t mash them too finely—you want noticeable pieces of egg throughout the salad.

3. Prepare the vegetables

Wash and halve the cherry tomatoes. Finely dice the red onion and chop the fresh dill. If using celery or pickles, chop them into small pieces.

4. Make the dressing

In a small bowl, whisk together mayonnaise, sour cream or Greek yoghurt, Dijon mustard, lemon juice, garlic powder, dried dill, paprika, salt, and black pepper.

Taste and adjust the seasoning as needed.

5. Combine everything

Add the chopped eggs, tomatoes, red onion, and fresh dill to a large mixing bowl.

Pour the creamy dressing over the top and gently fold everything together. Be careful not to crush the tomatoes or eggs.

6. Chill

Cover and refrigerate for 20–30 minutes before serving. This gives the flavours time to blend and makes the salad even more delicious.

7. Serve

Spoon the creamy tomato egg salad into a serving bowl. Garnish with extra fresh dill and freshly cracked black pepper.

Serve immediately with your favourite crackers.

 Best Crackers to Serve With

This salad pairs especially well with:

  • Saltine crackers
  • Ritz-style buttery crackers
  • Whole-grain crackers
  • Multigrain crackers
  • Seeded crackers

You can also serve it over toasted bread, lettuce leaves, or cucumber slices.

 Recipe Tips

Drain watery tomatoes: If your tomatoes are particularly juicy, gently remove some of the seeds before adding them. This prevents the salad from becoming watery.

Cool the eggs completely: Cold eggs are easier to chop and help keep the creamy dressing thick.

Don’t overmix: Fold gently to keep the tomatoes intact and the egg pieces chunky.

Make it lighter: Replace some or all of the mayonnaise with plain Greek yoghurt.

Add a little heat: A pinch of cayenne pepper or a few dashes of hot sauce adds a delicious kick.

For extra crunch: Add finely chopped celery or cucumber.
