Ingredients

For the Frittata

  • 4 medium potatoes, peeled and diced

  • 1 cup shredded cheddar cheese

  • ½ cup bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped parsley
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp butter

For Garnish

  • Fresh parsley
  • Extra grated Parmesan (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease an 8-inch round baking pan or oven-safe skillet.
  2. Boil the diced potatoes for 8–10 minutes until just fork-tender. Drain and let cool slightly.
  3. Heat olive oil and butter in a skillet over medium heat. Sauté the onion and bell pepper for 4–5 minutes until softened.
  4. Add the garlic and cook for another 30 seconds.
  5. In a large bowl, whisk together the eggs, Italian seasoning, paprika, salt, and black pepper.
  6. Stir in the mozzarella, cheddar cheese, parsley, cooked potatoes, and sautéed vegetables.
  7. Pour the mixture into the prepared baking dish and spread evenly.
  8. Sprinkle a little extra cheese over the top.
  9. Bake for 30–35 minutes, or until the center is set and the top is golden brown.
  10. For a beautifully browned top, broil for 2–3 minutes if desired.
  11. Let the frittata rest for 5 minutes before slicing.
  12. Garnish with fresh parsley and serve warm.
