Ingredients
For the Frittata
- 4 medium potatoes, peeled and diced
- 8 large eggs
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1 small onion, finely diced
- ½ cup bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp chopped parsley
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 2 tbsp butter
For Garnish
- Fresh parsley
- Extra grated Parmesan (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease an 8-inch round baking pan or oven-safe skillet.
- Boil the diced potatoes for 8–10 minutes until just fork-tender. Drain and let cool slightly.
- Heat olive oil and butter in a skillet over medium heat. Sauté the onion and bell pepper for 4–5 minutes until softened.
- Add the garlic and cook for another 30 seconds.
- In a large bowl, whisk together the eggs, Italian seasoning, paprika, salt, and black pepper.
- Stir in the mozzarella, cheddar cheese, parsley, cooked potatoes, and sautéed vegetables.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle a little extra cheese over the top.
- Bake for 30–35 minutes, or until the center is set and the top is golden brown.
- For a beautifully browned top, broil for 2–3 minutes if desired.
- Let the frittata rest for 5 minutes before slicing.
- Garnish with fresh parsley and serve warm.
