Ingredients

For the Bake

  • 500 g fresh spinach (or 300 g frozen spinach, thawed and squeezed dry)
  • 200 g feta cheese, crumbled
  • 200 g mozzarella cheese, shredded
  • 50 g Parmesan cheese, grated (optional)
  • 5 large eggs
  • 1 cup (240 ml) milk
  • ½ cup (120 ml) heavy cream (optional)
  • 3 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • Pinch of ground nutmeg (optional)

Instructions

1. Prepare the Oven

  • Preheat the oven to 350°F (180°C).
  • Lightly grease an 8×8-inch (20×20 cm) baking dish.

2. Cook the Spinach

  • Heat the olive oil in a large skillet over medium heat.
  • Sauté the chopped onion for 3–4 minutes until softened.
  • Add the minced garlic and cook for 30 seconds until fragrant.
  • Stir in the spinach and cook until wilted (or heated through if using frozen spinach).
  • Remove from the heat, let cool slightly, then squeeze out any excess moisture.

3. Make the Batter

In a large mixing bowl, whisk together:

  • Eggs
  • Milk
  • Heavy cream (if using)
  • Flour
  • Baking powder
  • Oregano
  • Black pepper
  • Salt
  • Nutmeg (optional)

Whisk until smooth and lump-free.

4. Combine

  • Fold the cooked spinach mixture into the batter.
  • Stir in the crumbled feta and half of the shredded mozzarella.

5. Assemble

  • Pour the mixture into the prepared baking dish.
  • Sprinkle the remaining mozzarella evenly over the top.
  • Finish with the grated Parmesan, if using.

6. Bake

  • Bake for 35–45 minutes, or until the center is set and the top is golden brown.
  • If desired, broil for 2–3 minutes for a more golden, bubbly cheese topping.

7. Rest & Serve

  • Let the bake rest for 10–15 minutes before slicing.
  • Garnish with fresh parsley or oregano if desired.
  • Serve warm.
