Spinach & Feta Cheese Bake

Ingredients
For the Bake
- 500 g fresh spinach (or 300 g frozen spinach, thawed and squeezed dry)
- 200 g feta cheese, crumbled
- 200 g mozzarella cheese, shredded
- 50 g Parmesan cheese, grated (optional)
- 5 large eggs
- 1 cup (240 ml) milk
- ½ cup (120 ml) heavy cream (optional)
- 3 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup all-purpose flour
- 1 tsp baking powder
- 1 tsp dried oregano
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- Pinch of ground nutmeg (optional)
Instructions
1. Prepare the Oven
- Preheat the oven to 350°F (180°C).
- Lightly grease an 8×8-inch (20×20 cm) baking dish.
2. Cook the Spinach
- Heat the olive oil in a large skillet over medium heat.
- Sauté the chopped onion for 3–4 minutes until softened.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the spinach and cook until wilted (or heated through if using frozen spinach).
- Remove from the heat, let cool slightly, then squeeze out any excess moisture.
3. Make the Batter
In a large mixing bowl, whisk together:
- Eggs
- Milk
- Heavy cream (if using)
- Flour
- Baking powder
- Oregano
- Black pepper
- Salt
- Nutmeg (optional)
Whisk until smooth and lump-free.
4. Combine
- Fold the cooked spinach mixture into the batter.
- Stir in the crumbled feta and half of the shredded mozzarella.
5. Assemble
- Pour the mixture into the prepared baking dish.
- Sprinkle the remaining mozzarella evenly over the top.
- Finish with the grated Parmesan, if using.
6. Bake
- Bake for 35–45 minutes, or until the center is set and the top is golden brown.
- If desired, broil for 2–3 minutes for a more golden, bubbly cheese topping.
7. Rest & Serve
- Let the bake rest for 10–15 minutes before slicing.
- Garnish with fresh parsley or oregano if desired.
- Serve warm.
