Ingredients
For the Steaks
- 2 ribeye steaks (1–1½ inches thick)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
For the Garlic Herb Butter
- 4 tablespoons unsalted butter
- 5 garlic cloves, smashed
- 3 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 tablespoon chopped fresh parsley
- ½ teaspoon crushed red pepper flakes (optional)
Optional Serving Suggestions
- Roasted baby potatoes
- Garlic mashed potatoes
- Steamed asparagus
- Grilled mushrooms
- Lemon wedges
Instructions
- Remove the ribeye steaks from the refrigerator about 30–45 minutes before cooking. Allowing them to come to room temperature helps them cook more evenly.
- Pat both steaks completely dry using paper towels. Moisture prevents a good crust from forming.
- Generously season both sides of each steak with kosher salt and freshly ground black pepper.
- Heat a large cast-iron skillet over high heat until it’s extremely hot. Add the olive oil and swirl to coat the pan.
- Carefully place the steaks into the hot skillet. Let them sear without moving them for about 3–4 minutes until a deep golden-brown crust develops.
- Flip the steaks using tongs.
- Immediately add the butter, smashed garlic cloves, thyme, and rosemary to the skillet.
- As the butter melts, tilt the skillet slightly and use a spoon to continuously baste the steaks with the hot garlic herb butter for another 3–5 minutes, depending on your preferred doneness.
- For medium-rare, cook until the internal temperature reaches about 130–135°F (54–57°C). For medium, cook to 140–145°F (60–63°C).
- Transfer the steaks to a cutting board and spoon the remaining garlic butter over the top.
- Let the steaks rest for at least 8–10 minutes before slicing. This keeps all the juices inside the meat.
- Sprinkle with chopped fresh parsley and serve immediately with your favorite side dishes.
Tips, Notes & Q&A
Choose well-marbled ribeye. The fat throughout the steak keeps it incredibly juicy and flavorful.
Use a cast-iron skillet. It retains heat exceptionally well, creating the perfect steakhouse crust.
Don’t overcrowd the pan. Cook in batches if necessary so the steaks sear instead of steam.
Always rest the steak. Cutting into it immediately causes the flavorful juices to run out.
Can I grill these instead? Absolutely! Grill over high heat, then finish with garlic herb butter during the final minutes of cooking.
Can I use dried herbs? Fresh herbs provide the best flavor, but dried thyme and rosemary can be substituted in smaller amounts if needed.
