Greek Eggplant Casserole
Ingredients
* 1 lb (450 g) lean ground beef
* 1 medium eggplant, sliced
* 1 zucchini, sliced
* 2 tomatoes, sliced
* 1 yellow squash, sliced (optional)
* 2 tbsp olive oil
* 1 small onion, diced
* 3 garlic cloves, minced
* 1 cup crushed tomatoes
* 2 tbsp tomato paste
* 1 tsp dried oregano
* 1 tsp paprika
* ½ tsp ground cinnamon (optional)
* Salt and black pepper, to taste
* 1½ cups shredded mozzarella cheese
* ¼ cup grated Parmesan cheese
* Fresh parsley, for garnish
Instructions
1. Prepare the Vegetables
* Preheat the oven to 375°F (190°C).
* Brush the eggplant, zucchini, and squash slices with olive oil.
* Roast them on a baking sheet for 12–15 minutes until slightly tender.
2. Cook the Beef
* Heat 1 tbsp olive oil in a skillet over medium heat.
* Sauté the onion for 3 minutes, then add the garlic.
* Add the ground beef and cook until browned.
* Stir in crushed tomatoes, tomato paste, oregano, paprika, cinnamon, salt, and pepper.
* Simmer for 10 minutes until thick.
3. Assemble
* Spread a layer of the beef mixture in a baking dish.
* Arrange the roasted eggplant, zucchini, tomato, and squash slices upright in alternating rows.
* Spoon any remaining beef mixture between the vegetables.
* Sprinkle mozzarella and Parmesan evenly over the top.
4. Bake
* Bake for 25–30 minutes, or until the cheese is melted, bubbly, and golden brown.
5. Serve
* Let the casserole rest for 10 minutes before serving.
* Garnish with fresh parsley and enjoy.
