Lazy Cake (No-Bake Chocolate Biscuit Cake)
Ingredients
- 2 packs (about 300 g) tea biscuits or digestive biscuits
- 2 cups (340 g) semi-sweet chocolate chips
- 1 cup heavy cream
- 1/4 cup unsalted butter
- 1/4 cup sweetened condensed milk
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Line a loaf pan with parchment paper.
- In a saucepan, heat the heavy cream until it begins to simmer. Remove from the heat.
- Add the chocolate chips, butter, condensed milk, vanilla, and salt. Stir until smooth and glossy.
- Spread a thin layer of the chocolate mixture on the bottom of the loaf pan.
- Arrange a layer of biscuits over the chocolate.
- Pour more chocolate over the biscuits, making sure they are fully coated.
- Repeat the layers of biscuits and chocolate until the pan is full, finishing with a smooth chocolate layer on top.
- Tap the pan gently to remove air bubbles.
- Refrigerate for at least 6 hours, or overnight, until completely firm.
- Carefully remove from the pan, slice, and serve chilled.
