Lazy Cake

Lazy Cake (No-Bake Chocolate Biscuit Cake)

Ingredients

  • 2 packs (about 300 g) tea biscuits or digestive biscuits
  • 2 cups (340 g) semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Line a loaf pan with parchment paper.
  2. In a saucepan, heat the heavy cream until it begins to simmer. Remove from the heat.
  3. Add the chocolate chips, butter, condensed milk, vanilla, and salt. Stir until smooth and glossy.
  4. Spread a thin layer of the chocolate mixture on the bottom of the loaf pan.
  5. Arrange a layer of biscuits over the chocolate.
  6. Pour more chocolate over the biscuits, making sure they are fully coated.
  7. Repeat the layers of biscuits and chocolate until the pan is full, finishing with a smooth chocolate layer on top.
  8. Tap the pan gently to remove air bubbles.
  9. Refrigerate for at least 6 hours, or overnight, until completely firm.
  10. Carefully remove from the pan, slice, and serve chilled.
