Mediterranean White Bean & Roasted Vegetable Skillet
Ingredients
For the Vegetables
* 2 medium potatoes, diced
* 1 zucchini, sliced
* 1 cup cherry tomatoes
* 1 yellow bell pepper, chopped
* 1 can (15 oz / 400 g) white beans, drained & rinsed
* 3 garlic cloves, minced
* 2 tbsp olive oil
Seasoning
* 1 tsp Italian seasoning
* ½ tsp paprika
* Salt & black pepper, to taste
* 1 tbsp fresh rosemary or parsley, chopped
Instructions
1. Preheat the oven to 400°F (200°C).
2. Prepare the vegetables: In a large baking dish, combine the potatoes, zucchini, cherry tomatoes, bell pepper, white beans, and minced garlic.
3. Season: Drizzle with olive oil. Sprinkle in the Italian seasoning, paprika, salt, and black pepper. Toss well until everything is evenly coated.
4. Roast: Bake for 35–40 minutes, stirring halfway through, until the potatoes are tender and the vegetables are lightly caramelized.
5. Finish: Remove from the oven and sprinkle with fresh rosemary or parsley. Gently toss everything together.
6. Serve: Enjoy warm as a light main dish or serve alongside grilled chicken, fish, or crusty bread.
