Pan-Seared White Fish with Roasted Cherry Tomatoes & Olives
Ingredients
For the Fish
* 2 white fish fillets (such as tilapia, cod, or sea bass)
* 2 tbsp olive oil
* 1 tsp paprika
* ½ tsp garlic powder
* Salt and black pepper, to taste
For the Vegetables
* 2 cups cherry tomatoes
* ½ cup green olives
* ½ cup Kalamata olives
* 4–5 garlic cloves
* 2–3 lemon slices
* 2 sprigs fresh rosemary
* 2–3 sprigs fresh thyme
* 1 tbsp chopped fresh parsley
Instructions
Step 1: Season the Fish
1. Pat the fish fillets dry with paper towels.
2. Rub both sides with olive oil.
3. Season with paprika, garlic powder, salt, and black pepper.
Step 2: Sear the Fish
1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
2. Place the fish in the pan and cook for 3–4 minutes per side, until golden brown.
3. Transfer the fish to a plate.
Step 3: Cook the Vegetables
1. In the same skillet, add the cherry tomatoes, olives, whole garlic cloves, rosemary, and thyme.
2. Cook for 6–8 minutes, stirring occasionally, until the tomatoes soften and begin to burst.
Step 4: Finish the Dish
1. Return the fish to the skillet, placing it over the vegetables.
2. Add the lemon slices around the fish.
3. Cook for another 2–3 minutes, allowing the flavors to combine and the fish to heat through.
Step 5: Garnish & Serve
1. Sprinkle with chopped fresh parsley.
2. Spoon the roasted tomatoes, olives, and pan juices over the fish.
3. Serve immediately with crusty bread, rice, mashed potatoes, or roasted vegetables.
