Ingredients
For the Skewers
- 3 cups watermelon, cut into 1-inch cubes
- 8 oz feta cheese, cut into 1-inch cubes
- 12 wooden skewers
For the Hot Honey Drizzle
- 3 tbsp honey
- 1/2 tsp red pepper flakes
- 1 tsp apple cider vinegar
- 1 pinch sea salt
For the Mint Finish
- 1/4 cup fresh mint leaves, finely chopped
Optional Garnish
- Lime zest
- Cracked black pepper
Instructions
Start by preparing the watermelon and feta. Choose a firm, seedless watermelon for easy slicing and cleaner skewers. Pat the watermelon cubes gently with paper towels to remove excess moisture. This helps the feta stay in place and keeps the platter from becoming watery.
Thread the watermelon and feta onto the wooden skewers, alternating between the two ingredients for a colorful presentation. You can place two watermelon cubes and one feta cube per skewer, or adjust the pattern however you like. Arrange the finished skewers neatly on a serving platter and place them in the refrigerator for about 10–15 minutes to chill. Serving them cold makes the flavors even more refreshing.
While the skewers chill, prepare the hot honey drizzle. In a small saucepan over low heat, combine the honey and red pepper flakes. Warm gently for 1–2 minutes, stirring occasionally. The goal is to infuse the honey with spice without boiling it. Remove the saucepan from the heat and stir in the apple cider vinegar and a small pinch of sea salt. The vinegar adds brightness and balances the sweetness of the honey perfectly.
Remove the skewers from the refrigerator and drizzle the warm hot honey mixture evenly over the top. Sprinkle generously with finely chopped fresh mint for a burst of cool flavor and vibrant color.
For an extra layer of flavor, garnish with freshly grated lime zest and a few cracks of black pepper. The citrus and pepper enhance the sweet watermelon and salty feta beautifully.
Serve immediately while chilled and fresh. These skewers are best enjoyed the same day and pair wonderfully with grilled dishes, sparkling drinks, or light summer salads.
