🍎 Apple Oat Pancakes
Soft, naturally sweet, and perfect for breakfast. These pancakes are made with wholesome oats and fresh apple—no refined flour needed.
🥞 Ingredients
- 1 cup rolled oats
- 1 medium apple, peeled and chopped
- 2 eggs
- ½ tsp baking powder
- ½ tsp ground cinnamon
- 1 tsp vanilla extract
- Pinch of salt
- 2–3 tbsp milk (if needed for blending)
- Butter or oil for cooking
👩‍🍳 Instructions
- Add the oats to a blender and blend into a fine flour.
- Add the chopped apple, eggs, baking powder, cinnamon, vanilla, salt, and milk.
- Blend until smooth. Let the batter rest for 5 minutes.
- Heat a lightly greased non-stick skillet over medium-low heat.
- Pour about ÂĽ cup of batter for each pancake.
- Cook for 2–3 minutes until bubbles appear and the edges set.
- Flip carefully and cook another 2–3 minutes until golden and cooked through.
- Serve warm with fresh apple slices, a drizzle of maple syrup or honey, and a sprinkle of cinnamon.
