Burrata & Roasted Cherry Tomato Toast
Ingredients
* 2 thick slices crusty bread (sourdough or country bread)
* 1 burrata cheese
* 1 cup cherry tomatoes
* 2 tbsp olive oil
* 2 tbsp chopped fresh basil
* Salt, to taste
* Black pepper, to taste
* Red pepper flakes (optional)
Instructions
1. Preheat the oven to 200°C (400°F). Toss the cherry tomatoes with 1 tablespoon of olive oil, a pinch of salt, and black pepper. Roast for 12–15 minutes, until softened and lightly blistered.
2. Meanwhile, toast the bread until golden and crisp. Brush each slice lightly with the remaining olive oil.
3. Tear the burrata into pieces and spread it evenly over the warm toast.
4. Spoon the roasted cherry tomatoes over the burrata.
5. Sprinkle with the chopped fresh basil, a little more black pepper, and red pepper flakes if desired.
6. Finish with a light drizzle of olive oil and serve immediately while the toast is warm and the burrata is creamy.
