  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 teaspoon dried oregano
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

 For the Cauliflower Rice

  • 1 large head cauliflower, riced (about 5 cups)

  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

For the Creamy Avocado Lime Sauce

  • 1 large ripe avocado
  • ½ cup plain Greek yogurt
  • Juice of 1 lime
  • 1 small garlic clove
  • 2 tablespoons fresh cilantro
  • 2–4 tablespoons water, as needed
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

🌿 Optional Toppings

  • Sliced avocado
  • Fresh cilantro
  • Lime wedges
  • Chili flakes
  • Sliced green onions

 Instructions

1️⃣ Marinate the Chicken

Pat the chicken breasts dry with paper towels.

In a bowl, combine the olive oil, lime juice, minced garlic, smoked paprika, cumin, chilli powder, oregano, salt, and black pepper.

Add the chicken and coat it well with the marinade.

Let it rest for 15–30 minutes. If you have more time, marinate it in the refrigerator for up to 4 hours for deeper flavour.

2️⃣ Grill the Chicken

Preheat a grill pan or outdoor grill over medium-high heat.

Lightly oil the grill grates or pan.

Place the chicken on the hot grill and cook for approximately 5–7 minutes per side, depending on thickness.

Cook until the chicken develops beautiful charred grill marks and reaches an internal temperature of 165°F (74°C).

Remove the chicken from the heat and let it rest for 5 minutes before slicing. This helps keep the chicken juicy.

3️⃣ Prepare the Cauliflower Rice

If using a whole cauliflower, cut it into florets and pulse in a food processor until it resembles rice.

Heat olive oil in a large skillet over medium heat.

Add the garlic and cook for about 30 seconds until fragrant.

Add the cauliflower rice, salt, and black pepper.

Cook for 5–7 minutes, stirring occasionally, until tender but not mushy.

Remove from the heat and stir in the fresh cilantro and lime juice.

For the fluffiest texture, avoid overcooking the cauliflower rice.

4️⃣ Make the Creamy Avocado Lime Sauce

Add the avocado, Greek yoghurt, lime juice, garlic, cilantro, salt, and black pepper to a blender or food processor.

Blend until completely smooth and creamy.

Add water, one tablespoon at a time, until you reach your desired consistency.

Taste and adjust the seasoning. Add extra lime juice for more tang or a pinch of chilli flakes for a little heat.

5️⃣ Assemble the Bowls

Divide the warm cauliflower rice among four bowls.

Slice the grilled chicken and arrange it on top.

Drizzle generously with the creamy avocado lime sauce.

Finish with sliced avocado, fresh cilantro, green onions, chilli flakes, and lime wedges if desired.

Serve immediately and enjoy! 😍

 Tips for the Best Results

Don’t overcook the chicken: Use a meat thermometer for perfectly juicy chicken.

Let the chicken rest: Resting allows the juices to redistribute throughout the meat.

Use ripe avocado: A soft, ripe avocado creates the creamiest sauce.

Keep the cauliflower fluffy: Cook it just until tender. Overcooking can make it watery.

Meal-prep tip: Store the avocado sauce separately and add it just before eating.

 Meal Prep & Storage

Store the grilled chicken and cauliflower rice in airtight containers in the refrigerator for up to 3–4 days.

The avocado lime sauce is best enjoyed fresh but can be stored in an airtight container for up to 2 days. Press plastic wrap directly onto the surface to help reduce browning.

Reheat the chicken and cauliflower rice gently before serving, then add the cold avocado lime sauce.
